Melting Moment:
Method: Part 1:
whisk 2 egg whites separately in a bowl and set aside
Method: Part 2:
in a mixing bowl combine:
120g chick pea flour
1 and ½ tablespoon vanilla essence
1 tablespoon bicarb soda
3 teaspoons stevia
½ teaspoon pink Himalayan salt
2 tablespoons sugar free fountain tomato sauce (40ml)
2 tablespoons thickened cream
Mix together to form a paste. Now add the egg whites in and combine together.
Method: Part 3
1. Using a tablespoon mixture into mini ramekins and microwave for 40 seconds (1200 watt microwave). Recommended to do 4 at a time, cooking 10 seconds longer for a crunchier texture. Recipe should make 10 mini melting moments.
2. Remove and let cool on cooling rack.
Note:
Phase 2 – each roll is 35% protein service. You can have 1 melting moment and 65g protein per meal.
Filling is 1-tablespoon cottage cheese, with ¼ teaspoon rose essence, a drop of pink food colouring and stevia to sweeten.
Add blueberries, strawberries, raspberries or fruit of your choice to your melting moment.
Store in an airtight container in the refrigerator for 5 to 7 days and use as desired in other recipes available in the book.
