- 1 tbsp. lemon juice
- Pinch of salt
- 1-cup mint, chopped
- 1-cup parsley, chopped
- 100g chicken
- 1-cup tomatoes
- ¼ cup spring onions, chopped
- Cook chicken breast until cooked through then dice finely and let cool.
- Once cooled, combine chicken, lemon juice, salt, mint, parsley, tomatoes and spring onion in a bowl and mix until combined.
