You’ll need:

  • 1 tbsp. lemon juice
  • Pinch of salt
  • 1-cup mint, chopped
  • 1-cup parsley, chopped
  • 100g chicken
  • 1-cup tomatoes
  • ¼ cup spring onions, chopped

To make: 

  1. Cook chicken breast until cooked through then dice finely and let cool.
  2. Once cooled, combine chicken, lemon juice, salt, mint, parsley, tomatoes and spring onion in a bowl and mix until combined.
