This dish is best if the pickled cucumber is prepared earlier in the day, or the previous day.
- 100g cooked peeled prawns (if large, cut into smaller pieces)
- approx half a cucumber depending on size (vegetable quota) – this is best ‘pickled” before-hand
Dice the cucumber and mix with it 2-3 tablespoons apple cider vinegar. Add herb/s of choice (eg thyme, marjoram, oregano…)
Drain the pickling solution from the cucumber then gently mix the cucumber with the prawns. Squeeze lemon juice over the top and garnish with sprig of parsley.
